Pumpkin pie French toast

I so wish I'd doubled this recipe while I was making it. Tripled, or quadrupled even!

These were so delicious…perfect for the fall season.

It's really simple…you just add some pumpkin and spices to the egg-milk mixture.

Then make French toast as you would.

With the leftovers, I cut them into "french toast sticks" and froze them. They freeze beautifully and the kids got to enjoy them for lunch a few days later!

Pumpkin Pie French Toast

Yield – 4 servings

Preparation Time – 5 minutes

Cooking Time – 15 minutes

Ingredients

  • 14 slices whole wheat sandwich bread ($1.50)
  • 3 eggs ($.30)
  • 1/2 cup milk ($.05)
  • 3/4 cup canned pumpkin ($.75ish)
  • 1 tsp homemade pumpkin pie spice ($.05)
  • Butter and syrup for serving ($.50)
  • Fresh fruit or smoothie as side ($1)

Directions

  • Set out the bread for dipping.
  • In a medium mixing bowl, whisk together the eggs, milk, pumpkin and pie spice until smooth.
  • Dip each side of the bread and cook on a hot, greased griddle or skillet. Flip after 1 – 2 minutes.
  • Once all are cooked, serve with butter and maple. And a side of fresh fruit.
  • If freezing, let cool completely to reduce freezer burn.
  • Enjoy this perfect fall "breakfast for dinner"!

Ways to Lower Cholesterol

Dietary fiber
Pros: Dietary fiber—found in beans, fruits, and other foods—binds to cholesterol, lowering LDL levels by about 5%, Dr. Pearson says. "It fills you up and often doesn't have a lot of empty calories in it," he adds. "It could be called a modest addition to the therapeutic regimen." It's also cheap and easy, available at grocery stores.
Cons: Despite its availability, Americans seem to have a hard time getting enough fiber. Experts recommend 25 to 35 grams a day, yet most adults get only about 12 grams.
Exercise
Pros: Exercise is a great way to raise HDL. People who have had a heart attack can reduce their death risk by 25% with exercise compared with usual care, Dr. Pearson says. "Physical activity is an amazingly important behavior," he says. "You could argue that it's an absolutely essential part of either community or therapeutic regimens."
Cons: Exercise requires more effort than popping a pill, and communities often aren't set up to make it easier. "There's no place to walk; it's unsafe; you may get run over; there are crime issues," Dr. Pearson says. "We need to engineer our environments better."
Red yeast rice
Pros: This dietary supplement is derived from a fungus that grows in rice and contains small amounts of lovastatin (Mevacor). It can be effective in people who can't take statins, says Jacob Warman, MD, chief of endocrinology at the Brooklyn Hospital Center, in New York City. Although different people see different benefits, he says, "it always works to some extent."
Cons: Dietary supplements aren't tightly regulated in the United States the way drugs are, so there can be confusion about concentrations and proper dosages. A 2008 study found a 100-fold difference between the highest and lowest levels of monacolin among various supplement brands tested.
Low-fat diet
Pros: Choosing healthy food such as fish and veggies over red meat and french fries is relatively straightforward, and Dr. Warman estimates it could lower cholesterol by up to 20% in some people. Societies with low-fat diets, such as Japan and parts of the Caribbean, have lower levels of heart attack and stroke.
Cons: Much like exercise, it can be hard to eat a healthy diet consistently. Some people have to go all out—adopting a vegan diet free of animal products, for example—before they see any difference, Dr. Warman says. Diet changes may not be enough to trump genetics, so don't hesitate to switch strategies if your cholesterol won't budge.

Sean Parker was looking edgy. Maybe it was because he was sitting in for Mark Pincus, who bowed out of this week's Web 2.0 Summit because of Zynga's pre-IPO quiet period. Or because this was a chance to show a large gathering of his peers that Justin Timberlake, no matter how smooth, could never be a Sean Parker. Or maybe it was just because he was Sean Parker.
He shifted nervously on a black leather sofa as he was asked about Facebook's new power, a power that leads many to see the company as fearsome and a little creepy. His posture hunched, his expression murine, his black wardrobe gothic porn, his eyes shifting around the room as he hunted for the precisely evasive word. Parker's reply finally came in the form of a couple of sentences that might stick with him for some time: "There's good creepy and there's bad creepy," he said. "Today's creepy is tomorrow's… necessity?"
It sounds so unpalatable coming from Sean Parker, but it's true. After all, more people are sharing more information on social networks than they were a few years ago. In a way, Parker was just channeling Zuckerberg, who said in early 2010 that people will grow more comfortable with sharing information about themselves; and more recently that people will want to share more of their lives as each year passes, and that "it's going to be really, really good."
But whatever Zuckerberg proclaims, Sean Parker oozes. And in that ooze lives a truth of Facebook that Zuckerberg – and any profitable social media – doesn't want you to know.
Parker, an early Facebook shareholder, said something that most of us don't want to admit to ourselves: We are learning to love Facebook's invasion of our private lives. We're learning to stop worrying that our faces, our thoughts, our conversations with family and friends – the little moments that accrete into our everyday lives – are becoming data-mining fodder for advertisers and anyone else Facebook forges a revenue-generating partnership with.
We are learning to love creepy. If we don't learn, we're going to be left out of the party. We won't know, for example, what our friends look like, in their far-flung residences, as they grow older. Or how adorable their kids are as they grow up. We won't know what they just read, or what movies they love, or what new artists they are listening to – unless we phone them up or sit down to lunch with them.
Which isn't bad … at first. But soon you soon start to feel like you're the 21st century Luddite buddy who has a weirdly obsessive need to hear news of your life in person, at lunch or whatever, rather than on Facebook. You're a beloved oddball at first. Then just an oddball. Then just the odd man out. It's not that you're crazy, or even creepy – it's that you're just not creepy enough. You still object to Facebook's advertisers and marketing partners collecting, sniffing and algorithmically analyzing every online confession of your personal life.
And yet, why shouldn't you feel that way? Online corporate snoopers may be getting smarter about you than you are about them. In 2010, a company called The Astonishing Tribe unveiled an app called Recognizr, which let you point an Android app at someone's face and learn – as fast as your mobile carrier will let you – the online personas they've created through public Facebook updates, Twitter feeds, and so on. Suddenly, your public self was much more publicly available that you had imagined.
More disturbingly, there are facial-recognition algorithms – developed under the adorably named yet still creepy (that is, bad creepy) PittPatt – which can scan a photo of you walking down the street and compare the pixels to a Facebook profile photo, and all the innocently adjacent data: birthday, birthplace, friends, family, political affiliation, etc. The things people take for granted are just the starting points of an investigation into the rest of their lives:
[I]t is possible to start from an anonymous face in the street, and end up with very sensitive information about that person, in a process of data 'accretion.' In the context of our experiment, it is this blending of online and offline data – made possible by the convergence of face recognition, social networks, data mining, and cloud computing – that we refer to as augmented reality.
So maybe Sean Parker is right. The necessary future is creepy. It used to be you applied for a job at a company, and some HR rep used a search engine to scour your past. Maybe, like most college students, you had our share of ungainly college moments; and maybe, like most college grads looking for work, you've deleted those terrible glories from the web.
But starting several years ago, your online life became something permanent. Anything you said, did, shared on a social network began to be preserved – according to the privacy policies of companies like Facebook – indefinitely. And it began to proliferate, into the databases of Facebook's partners.
In other words, our lives will be uploaded by, and observed by, and written on some server by, and remembered by some engineer who, at the end of the day, doesn't really know us, or who we are. Of course, most engineers won't care who we are. But what if that engineer isn't someone we trust? What if they just do what they're told, so they can get paid like the rest of us?
It's never been easier to express ourselves. We live in an era that demands self-publishing so much there must be something wrong with us if we don't. It's a great thing – except for one thing: We can't control what we publish, what we express. There is no deleting of ungainly moments anymore, there is just the power to counter those juvenile moments with more mature, adult perspectives. In a way, it's a lot like your high school or college friends who remember your youthful indiscretions – only now those memories belong to corporations as well. Friends forgive and forget, but corporate data mines never forget.
Managing who sees what data about you online is becoming an increasingly impossible task. The first 20 years of the web were about users expressing themselves, deciding what parts of their lives they published online. Increasingly your online identity belongs to a company like Facebook or Google. You either deal with that creepy fact, or you just don't exist online.

R2-D2 Disneyland Souvenir Cup: Definitely The Droid We're Looking For

This awesome R2-D2 cup was discovered by Ryan over at GeekAlerts and I have to say that it looks a lot better than the one we featured a while ago, which was somewhat expensive and only available in Japan. The best thing about this R2 unit is that it looks good and you won't spend too much money, if you live near Disneyland, that is.

The R2-D2 Souvenir Cup is somewhat large, meaning that you can easily use it as a dessert cup or a pencil holder. It stands about 8.5″ in height, and the lid is hinged so you can check on its motivator unit if needed. It's definitely something cool to have around on your desk, while you're getting ready to re-watch Star Wars for the n-teenth time.

The cups themselves cost $11.49 (USD) which includes a chocolate parfait dessert – apparently something droids like to eat. It's really a great deal since this cup features a lot more details than the previously mentioned Japanese version. If you want one, you'll need to head over to Red Rocket's Pizza Port or Tomorrowland Terrace at Disneyland.

Link's latest mission to save the princess is a long one, and it's easy to get stumped. But if you're especially dedicated to the game, you're hoping to hunt down all of the Gratitude Crystals and Heart Pieces. And given how big the world is, that's tough to do.
Luckily, there's GameFaqs, which has a number of walkthroughs and in-depth notes about virtually every aspect of Skyward Sword. It's entirely text-based and not as pretty as some other tip sites, but the information, gathered from the site's large community, is invaluable.

Evian Star Wars Bottles: Drink the Force

While I'm far from being a water-snob, I do like drinking Evian instead of tap water whenever I can find it here in Taipei. These concept Star Wars Evian bottles look pretty awesome, and just make me want to drink the expensive bottled water even more.

The special-edition bottles were designed by Mandy Brencys, who probably likes drinking Evian too – and definitely likes Star Wars. The bottles themselves are shaped a bit like lightsabers, so you're supposed to wield them as such, depending on which side you've chosen, the Light Side or the Dark Side of the Force.

While Evian probably won't ever make these, maybe if enough geeks forward them the concept, they might be convinced. I think the R2-D2 bottle looks the best. Which one is your favorite?

Christmas at the Skywalkers', LEGO Style

This shot of Luke and Leia decorating the Xmas tree does look quite funny, though the idea of a dead Vader head on as a tree-topper is a bit morbid. Either way, even with Darth Vader gone, the Skywalkers still have to celebrate Christmas, even if they are in a galaxy far, far away.

Geeks who also happen to be fans of Mickey Mouse might enjoy telling time with this modern watch, which uses the head and ears of the famous cartoon mouse to display the time.

While I'm 1000% certain that this thing isn't official Disney merchandise, it definitely captures the iconic mouse-head and conveys a strong sense of Disneyana on your wrist. It tells time using 33 LEDs arranged into three rings. Not-Mickey's head shows the current hour, while left ear displays single minutes, the right ear displays tens of minutes. It also displays the date with a press of the button.

While the build quality definitely looks suspect, and Disney's lawyers might come knocking on your door if you wear one, it's actually not a bad looking watch.

The best part of course is because it's a cheap, unlicensed Chinese gadget is that it sells for just $7.35 (USD) over at VKAmobi, so if it sucks, you won't feel like you flushed too much money down the drain

Awesome Star Wars battle

Star Wars' Old Republic Forces Its Way Into Times Square

I've seen loads of different Star Wars promos over the years, but this epic Star Wars battle is a pretty good one. To celebrate the official launch of BioWare's Star Wars: The Old Republic video game, EA set an army of Jedi and Sith loose on Times Square, lightsabers in hand.

This battle between good and evil was staged on Tuesday, December 20th, 2011, and involved about 100 or so people having a good old lightsaber-battle. Of course, the Jedi had blue sabers and the Sith donned red ones.

It must have been pretty awesome to witness up close, especially if you're a Star Wars fan. Would you have wanted to be a Jedi or a Sith?

The versatility and infinite use of LEGO bricks are the main reasons for the Danish toy company's enduring success. But I think another reason why the company stays in the public's eye is because of tie-ins with popular fictional franchises like Batman and Indiana Jones. And when it comes to video games, few franchises can claim to be as popular as The Legend of Zelda. So why not make official Zelda LEGO?

That's exactly the idea being put forward by Michael Inglis. The pictures show some of Inglis' designs for a theoretical LEGO Zelda set.

Inglis already makes 3D printed Zelda swords that can be used with official LEGO toys, but he's well aware that with their resources, LEGO – and Nintendo – can do so much more for fans, not to mention their bank account.

It's not a dangerous idea, but Inglis can't do it alone. Build a browser out of bricks and head to Lego Cuusoo to support his concept. Cuusoo is similar to Kickstarter, except it's LEGO's way of crowdsourcing ideas and gauging consumer interest in said ideas. Also, you don't have to spend or pledge any amount of money to support a concept, so go ahead and vote. Just tell LEGO not to bother with a Navi minifig.

One of my biggest peeves as a dietitian is when naturally nutritious foods are made out to be the bad guys simply because of the way they're prepared or what other ingredients they're paired with. Case in point: potatoes. As is, they're loaded with fiber, potassium, and vitamin C. If you drench and fry them in oil, that's another story. Also? Spinach and artichokes. Smooshed together in a dip with cream cheese, salt and regular cheese it's an unhealthy calorie bomb at around 100 calories per tablespoon. Yiiiikes! But on their own, they're veggies jam-packed with fiber and nutrients.

I had a hankering for that spinach-artichoke combo and didn't want the artery clogging junk that comes along with the dip, so I decided to use them as a homemade pizza topping. I love a lot (and I mean a LOT) of veggies on my pizza, so I absolutely covered it with fresh spinach and chopped artichoke hearts. Underneath all that goodness, I used a can of Red Gold's Red Pack tomato sauce, which doesn't contain any high fructose corn syrup – woohoo! Normally I buy a jar of tomato sauce or pizza sauce, and always wind up with so much left over. This time I snagged the 15 ounce can which was the perfect amount (and I had just enough to use on both sets of pizza).

I divvied up the pizzas into two separate pies to make baking and storing leftovers easier. I even made a second pizza for our friend who I cook for, and split up the dough into four single-serve pizzas.
Ingredients for one large pizza:
Fresh, prepared whole wheat pizza dough
15 oz can tomato sauce
3/4 – 1 cup cheese (I used shredded soy)
1/3 bag fresh baby spinach
1 can artichoke hearts, chopped
Roll out the pizza dough into a thin layer. This was actually easier to do with the two smaller pizzas than with one large pizza. Whenever I make one large pizza, I can never keep the dough rolled out thin enough and wind up with a huge sticky, uneven dough mess.
Next I spread on the tomato sauce. I layered the fresh spinach on top of the tomatoes and underneath the cheese. This way, the spinach trapped under the cheese would help steam and cook it so it wasn't like I had a hot salad on my pizza.
Finally I topped the cheese with the artichokes and baked in a 350 oven for about 10 minutes until the crust started to brown. This totally took care of my spinach artichoke dip craving, as well as Funk's twice-weekly pizza craving.

Christmas Tree Cookie Ball Pops

total time
6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 pkg.  (15.25 oz.) OREO Cool Mint Creme Cookies, finely crushed (about 4 cups)
2 pkg. (6 squares each) BAKER'S White Chocolate, melted
6 drops  green food coloring
3 Tbsp. green and/or white decorating icings
40   cinnamon red hot candies

Make It

MIX cream cheese and cookie crumbs until well blended.
SHAPE into 40 (1-inch) balls; place in single layer in shallow pan. Freeze 10 min. Mix melted chocolate and food coloring until well blended. Dip balls in chocolate; place in single layer in shallow waxed paper-lined pan. Insert lollipop stick into each ball. Decorate with decorating icing and candies as shown in photo.
REFRIGERATE 1 hour or until firm. Keep refrigerated.

How to Melt Chocolate
Place unwrapped chocolate squares in microwaveable bowl. Microwave on HIGH 2 min. or until chocolate is completely melted, stirring every 30 sec.
How to Easily Dip Balls
To easily coat balls with the melted chocolate, add balls, in batches, to bowl of melted chocolate. Use 2 forks to roll balls in chocolate until evenly coated. Remove balls with forks, letting excess chocolate drip back into bowl. Place balls in prepared pan; let stand until firm.

2 tbsp. Fat Free Reddi-wip
1/2 sheet (2 crackers) low-fat honey graham crackers, crushed 

Directions:
Place all ingredients exceptReddi-wip and crushed graham crackers in a blender. Blend at high speed until thoroughly mixed.

Pour into a glass. If you like, stir in additional pumpkin pie spice. Top it off with Reddi-wip and crushed graham crackers. Mmmm!
