Chili

This is from Eat This not That:

Cook This: Serious Chili
One truth all serious chili heads can agree on is the fundamental importance of a good chili powder. That means skipping the bottled supermarket stuff and making your own secret spice powder

Texans and New Mexicans—both of whom lay claim to the advent of chili—disagree on most matters when it comes to this divisive dish. Beans or no beans? Tomatoes? Chunks of chuck or ground? One truth all serious chili heads can agree on, though, is the fundamental importance of a good chili powder. That means skipping the bottled supermarket stuff and making your own secret spice powder. This is a beginner powder, requiring nothing more than toasting two different dried chiles, then pulverizing them in a coffee grinder. Use leftovers to rub on steaks, spike dips, and dust on slices of mango.

You'll Need:
3 ancho chiles
10 dried chiles de arbol
1 Tbsp oil or bacon grease
2 lb chuck roast, but into 1/2" pieces
Salt and black pepper to taste
2 medium onions, diced
2 poblano peppers, diced
2 cloves garlic, minced
1 tsp ground cumin
1 can (28 oz) tomato puree
2 cups low-sodium beef stock
1 can (14-16 oz) pinto beans, drained
Diced onion, minced jalapeno, shredded cheese, chopped cilantro, and/or sour cream, for serving

How to Make It:
*Heat a cast-iron or stainless steel skillet over medium heat. Add the chiles and cook, turning occasionally, until lightly toasted and crispy. The chiles de arbol will take about 5 minutes; the anchos about 10. (Be careful not to inhale too deeply—chile smoke has been known to cause wild fits of coughing.) Discard the stems and seeds and place the chiles in a clean coffee grinder or food processor. Grind into a fine dust. That's your chili powder—the heart of this dish.

*Heat the oil in a large pot over medium-high heat. Season the beef with salt and pepper and add to the pan. Sear the meat until all sides are nicely browned, then add the onions, poblano peppers, garlic, cumin, and 2 tablespoons of the chili powder. Cook, stirring occasionally, for about 5 minutes, until the vegetables are softened. Stir in the tomatoes and stock. Lower the heat and simmer for at least 45 minutes (but preferably up to 90 minutes), until the beef is fork tender.

*Stir in the beans a few minutes before serving, and heat through. Serve with any of the garnishes.

Straw Wars

From Technabob blog:

Star Wars Scarecrows: Straw Wars, Nothing but Straw Wars…

Posted: 19 Oct 2012 02:00 PM PDT

Scarecrows usually scare people (and crows) away, but this Star Wars scarecrow scene is just going to attract fans. If we are very lucky they will scare away the prequels, and keep Lucas from ever messing with the original saga again.

Imgur user jesusshuttlesworth34 created (or maybe just photographed) this awesome scene. I really don't care who created it, it's just great. All of your favorite characters are here.

straw stormtrooper

There's a stormtrooper, Obi-Wan, Yoda, Vader, Palpatine, R2-D2, Jabba, the Death Star and more. There's even an Emperor with light-up Force lightning coming from his hands.

It must have taken a long time to prepare and make these scarecrows. I would never take them down. In fact, how do you feel about an all scarecrow Star Wars Halloween ChristmasNew Years Easter Labor Day special? Sounds great to me.

Watch Out for Store-Bought Olive Oil

Saving Dinner

Saving Dinner
Dear Friend,

If you've seen my recipes, you know I love olive oil. And what's not to love -- it's both delicious and good for you (what a concept!) So imagine my surprise when some of the most respected media in America have been featuring articles on the widespread "Olive Oil Scandal" in US supermarkets and gourmet stores.

"What's up with this?," I wondered. "Probably just another silly health scare about a perfectly nutritious food, right?" Well, I did a little digging and found...it's actually worse than I thought! Get this...

* Independent tests at the University of California, Davis, have discovered that 69% of all imported extra virgin olive oils tested are fake, adulterated, stale, or even rancid. These include many of the most popular brands in the US! How can this be???

* The New York Times reports that "50 percent of the olive oil sold in America is, to some degree, fraudulent."

*  "American grocery stores are awash in cheap, fake 'extra virgins,'" adds The Wall Street Journal.

* And CBS News chimes in: "Consumers who think they're buying one of the healthiest foods on the planet often get something very different."

What on earth is going on? Naturally, my next question was, how can we as health-conscious consumers (and guardians of our families' health!) avoid these shamelessly counterfeit and adulterated oils and get honest-to-goodness, fresh, 100% pure and delicious olive oil the way it's meant to be?

At a recent health conference, I learned a lot more about this "Great Extra Virgin Olive Oil Scandal" and want to recommend a special resource to you.

If you click on the link below, you'll read an MD's "consumer guide" to the world's purest, freshest, healthiest olive oils ... two tips on how to buy safe and pure olive oil no matter where you shop ... an olive oil expert's tip revealing the "code" on the bottle that should tell you how fresh the oil is (beware: it's NOT the "expiration" or "best used by" date!) ... how to store your oil so it doesn't grow stale or rancid ... and even how you can receive a free, full-size sample bottle of one of the best extra virgin olive oils in the world (independently lab-tested to be 100% pure extra virgin). In fact, this is the olive oil I'm using now and it's so flavorful, it's as if I never tasted real olive oil before. These days it's the only one I proudly serve my family and guests.

I'm really in love with this olive oil and the company behind it, and will mention them more in the future. But for now...

Peace be within thy walls, and prosperity within thy palaces.

Some people's homes are war zones. Families in conflict abound in our society. So much unhappiness comes from people no longer knowing how to share and give. Too many people are looking out for themselves, and they aren't willing to look out for each other. Mothers fight with daughters, sons with fathers, husbands and wives, brothers and sisters, each feeding the beast of hurt and discord. We are lost without a peacemaker, one who knows our hearts and can pave the way to reconciliation. Luckily, Christians have such a peacemaker. Christ came to unite all God's children, brothers, and sisters in the faith. He works in the home to call us to a deep love that is consecrated in blood. If we strive for peace within the walls, then we are one step closer to peace between our nations. God will heal all wounds, if we will only welcome Him in.

Prayer: Christ, You have broken down the dividing walls of hostility, and You are waiting to build bridges of love. Begin with me, Lord, and move forth in love. Amen.

Bailey's Brownies

Found on a blog:(wish I could find the link)
Bailey's Brownies

Ingredients:

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder (I used dark cocoa)
1/4 teaspoon baking soda
1/4 teaspoon salt
heaping 1/3 cup bittersweet chocolate chips
1/4 cup (4 Tablespoons) butter
2 eggs
1 cup sugar
1/3 cup Baileys Irish Cream
1 teaspoon vanilla extract

Directions:

Preheat oven to 350°F. Line an 8×8-inch pan with foil and lightly spritz with cooking spray; set aside.

In a medium bowl, whisk together flour, cocoa, baking soda, and salt until combined. Set aside.

Place chocolate and butter in a large microwave-proof bowl and melt in 30 second spurts, stirring in between each interval until completely melted. Set aside to cool a bit. (Alternatively, melt chocolate and butter in a saucepan set over low heat, stirring frequently until melted. Set aside.)

Once the chocolate mixture is warm (not hot!) add eggs, one at a time, whisking constantly to incorporate the eggs. Whisk vigorously for about 10 seconds to incorporate fully. Add sugar, vanilla, and Baileys and whisk until combined.

Add the flour mixture into the chocolate mixture, folding until just combined (the flour JUST disappears).

Pour batter into the prepared pan, give it a quick wiggle to even out the batter. Bake at for about 18-20 minutes, or until a toothpick comes out with a few moist crumbs attached. Enjoy and de-stress : )
